Transform Summertime’s classic sandwich into a low-carb, comfort food salad that may be enjoyed year-round.

BLT sandwiches are one of America’s favorite sandwiches for good reason. They are my absolute favorite sandwich. I love the b, l, t with extra mayo and a little red onion on a croissant.

The combination of bacon, lettuce and tomato speak summertime comfort food. In our local newspaper, a recipe for BLT salad appeared recently. Typically, in small town newspapers, the recipes that are shared are tried-and-true and, in most cases, are downhome comfort food. The kind of recipes that might be found at a family potluck or a church’s dinner-on-the-grounds. I prepared this recipe and added a printable version for you near the end of this post.

In BLT salad, these classic flavors are combined for a low-carb version of our favorite summer sandwich. Make it even easier with some shortcuts that I share in this video.

What you’ll need:

Bacon

Choose to purchase bacon and cook it at home. Or, take a short-cut and purchase pre-cooked bacon which may be found either in the refrigerated section of the grocery store or on the displays right near there. This bacon just needs to be re-warmed, if desired. An even shorter-cut would be to use the shelf-stable bacon real bacon pieces which I actually used in this video.

Lettuce

Use Romaine, iceberg or leaf lettuce for the base of this salad or take a shortcut and use pre-packaged, shredded lettuce.

Tomatoes

Fresh tomatoes are pretty much indisputable in this recipe, however, any variety should work, even cherry tomatoes.

Dressing

Just like on our classic BLT sandwiches, mayonnaise is a must! Can I get an ‘amen’?! My favorite mayonnaise is Duke’s. Combine mayonnaise with the milk and spices to create the simple dressing for this salad.
