Butterscotch Pudding: Using Bulk Dry Pantry Mix

Homemade is certainly best when it comes to this butterscotch pudding made with your bulk dry pantry mix.
Course: Dessert

Ingredients

  • 3 cups milk
  • ¾ cup Bulk Dry Amish Pudding Pantry Mix
  • 2 eggs beaten
  • ½ cup brown sugar
  • 4 tablespoons butter
  • 1 tablespoon vanilla

Method

  1. Heat 2½ cups milk over medium heat. Heat until small bubbles form along the edges of the saucepan.
  2. While milk is slowly heating, in a separate bowl, combine remaining milk, Pudding Mix, eggs and brown sugar. Add mixture to hot milk, cook 1 minute, stirring or whisking constantly.
  3. Remove from heat. Add butter and vanilla.
  4. Store in refrigerator. Pudding will thicken as it cools.

Notes

Homemade, cooked pudding is worth the extra two or so minutes that it takes to make it. Typically, butterscotch is not a preferred flavor of mine but this pudding changed my mind.
Pudding thickens as it cools. This may even be used as a pie filling in a pre-baked pie shell. Learn how to pre-bake a pie crust HERE.
