This delightful little snack is healthy and easy to make. Simply use one can of chickpeas and some warm spices. Double the recipe to satisfy a crowd. Serve these spicy snacks at parties, game nights or as toppings for salads.

We recently hosted a family who was traveling through our state. They were expected for supper and a nice evening visit. I knew they would be hungry as soon as they arrived, so I planned on two appetizers. Turns out, both of the snacks were appreciated and well-received. I served Cheesy Cucumber Snack and these Crispy Curry Chickpeas.

For our supper, I served easy dishes that please most folks. Lasagna Casserole, Caesar Salad, whole kernel corn, Cheesy Italian Bread, and Chocolate Sheet Cake made up our menu. The menu was a hit. I have a 100% stainless steel pan set that is my go-to for most of these recipes. It is made entirely in Ohio, USA, by folks I know personally. Check the three-piece set out right here. This line of pans is durable, dishwasher safe and a completely healthy way to prepare food.

Crispy Curry Chickpea Snack

This delightful little snack is healthy and easy to make. Serve these spicy snacks at parties, game nights or as toppings for salads.
Course: Appetizer, Snack

Ingredients

  • 1 (15-16 oz.) can chickpeas, drained and rinsed
  • 1 tablespoon avocado oil or oil of choice
  • ½ teaspoon good quality salt I use Redmond's Real Salt.
  • 1 teaspoon curry powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder

Method

  1. Rinse and drain canned chickpeas. See note below.
  2. Spread rinsed chickpeas onto a clean kitchen towel or paper towels. Roll another towel over the chickpeas, drying them as much as possible. Note below. The dryer the chickpeas, the crispier they will bake.
  3. Transfer the dried chickpeas into a bowl. Add oil and spices. Mix well.
  4. Spread chickpeas onto a baking sheet that has been lined with parchment paper. They should be in one layer with space between them. Use two baking sheets, if necessary.
  5. Roast in 400F oven for 20-25 minutes, shaking the pan halfway through baking time to redistribute. The resulting chickpeas should be crispy and golden brown.
  6. Remove from oven. Enjoy warm or at room temperature.
  7. When completely cool, store in the refrigerator. These will mold if not refrigerated.

Notes

Chickpeas may be found in the canned grocery section. These may be called garbanzo beans.
Do not use dried chickpeas/garbanzo beans for this recipe UNLESS they have been soaked overnight and cooked until edible.
The drying process will loosen some of the outer shell. Just throw those outer coverings into the trash or compost. Leaving these outer coverings in the snack won’t hurt anything either. They will basically dry up and not be too noticeable in the final product.
