Easily Bake Frozen Chicken Breasts for Many Recipes
Having cooked, shredded chicken at the ready is such a time-saver. Use it in casseroles, salads, burritos, tacos, and on sandwiches, in soup and more. Another time saver is to bulk purchase boneless, frozen chicken breasts and bake all at once. The cooked chicken may then be used or frozen, after baking, for future use.

Making Choices
Diligent Homemakers need to save time *and* money, do we not? Often we are forced to choose which of these commodities is most important to conserve. I have found that purchasing 5-pound packages of frozen chicken breasts from our local Gordon Food Service (GFS) is both a time and money saver for me. After shopping around and trying other store brands, I have also found that we like the taste and texture of these frozen breasts.

Welcome to my cozy kitchen as I share a video tutorial of how I prepare frozen chicken breasts, right here.
Did you know I share 205 family favorite recipes in my most popular cookbook, From Katie’s Kitchen? Many of those recipes call for cooked, shredded chicken.
Don’t miss out on these tried-and-true recipes, y’all.
Here is where I would like to make mention that I do highly-value pastured, organic meat but I can’t afford that on a regular basis. Our very definition of a Diligent Homemaker reminds us that we are doing the best we can, where we are, with what we have.
Be sure you are baking properly!

A common cooking mistake is to assume that poultry has reached the well-cooked temperature. Don’t risk illness by assuming, friend. Buy a meat thermometer. If you don’t already own one and would like the best on the market (in my opinion and that of professional chefs), check out this one. I love the Thermopen One (in red, of course.) It measures in one second and is used for more than just meat. I only need one thermometer to take the temps of all the things in my cooking.
How to Take Temperature of Chicken Breasts
Insert the thermometer into a thicker part of the meat. Do not touch a bone (when baking bone-in meat) or the pan, as doing so will result in a false reading. Properly cooked chicken breasts should measure 165F (74C).
At the Ready…
Baking the entire bag (or more or less) of frozen chicken breasts makes our life easier when our teen son needs a protein snack or when Mama has a hankerin’ for homemade chicken salad (my go-to lunch favorite!) We pull out of the fridge these cooked chicken breasts all week-long for lunch sandwiches or to add to a lunch plate for Mr. Patient. Feel free to also freeze the cooked breasts for later use, as well.
How will you use these chicken breasts? What about in my Hot Chicken Salad? Oh, my, it’s as yummy as classic, cold chicken salad but with some tasty twists. Here’s my recipe for this salad that may be used for any meal but try it for a spring brunch with fresh fruit and my Mama’s Bran Muffins.
Always remember to count your blessings and know you are loved,
❤️Mrs. Katie
