Ham and Corn Chowder

I made this recipe from leftovers one day. The whole family enjoyed.

Ingredients

  • Leftover ham cubed or diced
  • Leftover mashed sweet or white potatoes
  • Chopped onions
  • 1 qt chicken broth
  • ¼ t. dried thyme
  • 8 oz. frozen corn
  • 1 c. milk.
  • ½ t. salt
  • 4 T. cornstarch
  • 1 t. black pepper

Method

  1. Heat ham, potatoes, onions, broth, corn and thyme in soup pot, stirring occasionally to keep potatoes from sticking to the bottom of the pot.
  2. Bring to a boil;
  3. In a shaker or glass jar, add milk, cornstarch, salt and black pepper. Mix well and add to pot.
  4. Heat thoroughly and enjoy with cornbread on a blistery day!
