Classic Sweet Potato Pie

Makes 2 pies

2 pounds cooked sweet potatoes

1/2 cup butter

3 eggs

1 cup sugar

1/2 cup sweetened condensed milk

1/2 cup evaporated milk

1 t. nutmeg

1 t. vanilla extract

1 t. lemon extract

2 frozen pie crusts, thawed, unbaked

Using mixer, mash the sweet potatoes. The “stringy” parts may be removed easily when they adhere to the mixer blades. Beat the potatoes with butter until smooth. Add remaining ingredients except pie shells. Mix well then pour into unbaked pie shells. Bake 350F on lowest oven rack about 55-60 minutes or until set. Allow to set  at least 10 minutes before eating or allow to cool completely before storing in cool place. May garnish with whipped cream and nutmeg or Mrs. Katie’s Pumpkin Pie Spice Mix.

Notes: Mrs. Katie’s favorite method of cooking sweet potatoes is baking with skins on. The skins peel easily after baking. However, the potatoes may be peeled then boiled. More nutrients are retained with baking.
