Recipe for Mrs. Katie’s Diner-Style Meatloaf:

2 pounds ground meat of choice
2 eggs, beaten
3/4 cup instant oats, dried bread crumbs or crushed saltine crackers
one packet of Mrs. Katie’s Diner Meatloaf Mix
8 oz. tomato sauce

Combine well. Shape into two bread loaf pans.
Bake 350F 40-60 min. (depending on thickness) until internal temp reaches 165F. Allow the meatloaf to sit in the juices before cutting. This provides a more tender and juicy product. The juices will fully reabsorb after a few minutes.

  1. This recipe may be prepared in 9 x 13 pan. Cooking time is 40 minutes. The meatloaf will not be thick like a typical meatloaf but it works fine and doesn’t take as long to cook.
  2. When using two bread loaf pans, the meatloaf is the thickness of typical meatloaf.
  3. One of our favorite parts of meatloaf is the topping: Combine equal parts yellow mustard, ketchup and brown sugar. (Try 1/4 cup each and make more, if desired.) Combine and spread over meatloaf during the last 20 minutes of baking.
  4. Add chopped green bell peppers and onions to this recipe, if desired.
  5. My favorite way to bake any meatloaf is to use a large baking sheet. Place a cookie cooling rack inside the baking sheet. Place a sheet of parchment paper over the cooling rack. Freeform meatloaves and place on parchment paper. Make one large loaf, several small ones or any number in between. Bake as directed. Cover with sauce during last 20 minutes. This method allows the grease from the meatloaf to drain into the baking sheet.
  6. Mrs. Katie’s Diner-Style Meatloaf Mix is great for hamburgers. Just use one packet of mix in two pounds of ground beef or other ground meat of your choice. Shape into patties. Grill or fry. Serve with buns and fixings.
  7. Make hamburgers per previous directions but smother with mushroom gravy and serve alongside creamy mashed potatoes.
  8. Make cold meatloaf sandwiches. Slice meatloaf and serve on desired bread with ketchup, mustard, mayonnaise or all three. (We like soft white or wheat bread for this.) Add pickles or Cowboy Candy and some crunchy iceberg lettuce. This is a great picnic food and classic Depression-era lunch.
