For years Owen used this recipe to make pancakes for himself and two older brothers. Later, Jon and the littles arrived in the family and, eventually, Jon happily took over the job of flipping the jacks. Pretty much every Wednesday morning of pretty much every week of the year Jon serves these pancakes to his younger siblings.
Feel free to add chocolate chips or fruit to this batter.
This recipe comes from one of our favorite books of Amish recipes, Miller Family Cookbook. One may tell from the worn and tattered recipe that this one has been well-used and loved.
Sweet Milk Pancakes
2 cups flour
4 t. baking powder
2 T. sugar
1/2 t. salt
1 3/4 cups milk
2 beaten eggs
2 T. melted butter or oil
Mix dry ingredients. Add milk, butter and eggs. Bake on griddle over medium heat.
