Schoolhouse Peanut Butter Bars
Classic school cafeteria dessert
- 3 lbs. powdered sugar
- 1 lb. butter softened
- 1 qt peanut butter
- 2 c. chocolate chips
- 2 ¾ T. coconut oil
- Combine powdered sugar, butter and peanut butter until thoroughly combined and smooth.
- Spread onto rectangular dish.
- Melt chips and oil. Pour over peanut butter layer and set in refrigerator to become firm.
- Cut into squares and serve.
Spotting these dessert bars in the public-school cafeteria line brought joy, whether I was in the third grade at McCord School or teaching third grade at Westhills Elementary, both in Marshall County, Tennessee.
