Schoolhouse Peanut Butter Bars

Classic school cafeteria dessert


  • 3 lbs. powdered sugar
  • 1 lb. butter softened
  • 1 qt peanut butter
  • 2 c. chocolate chips
  • 2 ¾ T. coconut oil


  • Combine powdered sugar, butter and peanut butter until thoroughly combined and smooth.
  • Spread onto rectangular dish.
  • Melt chips and oil. Pour over peanut butter layer and set in refrigerator to become firm.
  • Cut into squares and serve.


Spotting these dessert bars in the public-school cafeteria line brought joy, whether I was in the third grade at McCord School or teaching third grade at Westhills Elementary, both in Marshall County, Tennessee.
