Broccoli Salad
Ingredients
- 2 bunches broccoli
- 1 package cherry tomatoes
- ½ large red onion chopped
- bacon cooked and chopped
- apple cider vinegar
- 1-2 T local honey
- ¾ cup mayonnaise
- salt and pepper
- shredded cheddar optional
- raisins optional
Instructions
- Wash and trim fresh, preferably organic, broccoli
- Wash cherry tomatoes. I do not halve them but you may wish to do so.
- In a large bowl, mix 2 large splashes of Apple Cider Vinegar, honey, salt, pepper, and mayonnaise. The salad may need more mayo after adding broccoli mixture.
- Add desired amounts of shredded cheddar and/or raisins to dressing mixture.
- Add sunflower seeds as desired.
- Add the broccoli mixture to the dressing mixture and refrigerate for a while before eating, if time allows.
Notes
This salad lasts for a few days and is great with dinner meals or lunch sandwiches.
