Caesar Salad Dressing
My version of a classic
- 3-4 anchovy fillets or equivalent anchovy paste
- 1 egg yolk
- 1-2 garlic cloves pressed or finely chopped
- ¼ c. red wine vinegar
- 1 T. Dijon mustard
- Mix above ingredients in high-powered blender or with immersion blender.
- While mixing, slowly add: 1 c. olive oil and black pepper to taste (Anchovies are salty.)
- Continue until desired consistency is reached. Refrigerate.
