Caesar Salad Dressing

My version of a classic
Servings 1 cup


  • 3-4 anchovy fillets or equivalent anchovy paste
  • 1 egg yolk
  • 1-2 garlic cloves pressed or finely chopped
  • ¼ c. red wine vinegar
  • 1 T. Dijon mustard


  • Mix above ingredients in high-powered blender or with immersion blender.
  • While mixing, slowly add: 1 c. olive oil and black pepper to taste (Anchovies are salty.)
  • Continue until desired consistency is reached. Refrigerate.
