Family Favorite Potato Salad
I developed the recipe and first used it when I catered a luncheon for teachers in amiddle Tennessee school.
Ingredients
- 5 lbs. russet potatoes peeled, chopped
- 1 T. salt in boiling water
- 3 bay leaves
- 3-5 boiled eggs peeled and chopped
- 1 ¾ c. mayonnaise
- 2 t. dill weed
- 2 t. Beau Monde Seasoning
- 1 ¾ t. salt
- ½ t. white pepper
Instructions
- Boil potatoes in salted water with bay leaves. When potatoes are fork tender, drain and discard bay leaves.
- In large bowl, mix well the mayonnaise and all seasonings.
- When potatoes are cool to the touch, add to the large bowl and mix well but lightly. Refrigerate.
Notes
This is the most requested potato salad in our family. We always serve it when we enjoy a big bowl of gumbo and rice. A friend from Louisiana taught us to put a large dollop of potato salad in the middle of our bowl of Gumbo. Good stuff, I tell ya!
