Marinated Cucumbers

Yield: 1 quart


  • Pickling cucumbers washed, not peeled, sliced thinly
  • Sweet onion sliced thinly
  • Pepper and salt suggested 1 t. each
  • Sugar or favorite sweetener suggested 2 t.
  • Apple cider vinegar


  • Fill a quart jar with a mixture of sliced cucumbers and onions.
  • Add salt, pepper and sugar to taste. (Begin with suggested measurements.)
  • Fill jar with half vinegar and half purified water. Replace tight lid and shake well to mix. Keep in the refrigerator.


Brent and I both grew up pairing these pickles with fresh garden vegetables. They
are great with Zucchini Fritters. Good stuff! Adjust recipe as desired.
