Zucchini Fritters with Dressing
Serves: 4-5, easily doubled
Ingredients
Fritter
- ½ c. milk
- 1 T. Ranch Dressing Mix
- 1 egg slightly beaten
- 2 c. shredded zucchini
- 1 c. AP flour
- 1 ½ t. baking powder
Garlic Dressing
- 1 head of garlic not cloves
- 2 t. vinegar
- 1 t. sugar
- ¾ c. mayonnaise
- ¾ c. sour cream
- ½ t. white pepper
- ¼ t. salt
Instructions
Fritter
- Combine all fritter ingredients and mix well.
- Prepare frying pan with about an inch of desired cooking oil.
- Heat oil to 375° (or until fritters begin to sizzle but not smoke and burn) when dropped into the oil.
- Drop by rounded tablespoons and turn once to brown both sides.
- Drain on paper towels and serve hot with sliced fresh garden tomatoes and Garlic Dressing.
Garlic Dressing
- Peel and crush all garlic cloves.
- Place garlic in food processor or blender with vinegar and sugar. Blend well.
- Add remaining ingredients, blending completely. Refrigerate, if time allows.

Notes: We have enjoyed these fritters for years. They are a great way to use abundant
garden zucchini squash and are enjoyed by those folks who claim to not care for zucchini.
