Zucchini Fritters with Dressing

Serves: 4-5, easily doubled
Servings 4

Ingredients
  

Fritter

  • ½ c. milk
  • 1 T. Ranch Dressing Mix
  • 1 egg slightly beaten
  • 2 c. shredded zucchini
  • 1 c. AP flour
  • 1 ½ t. baking powder

Garlic Dressing

  • 1 head of garlic not cloves
  • 2 t. vinegar
  • 1 t. sugar
  • ¾ c. mayonnaise
  • ¾ c. sour cream
  • ½ t. white pepper
  • ¼ t. salt

Instructions
 

Fritter

  • Combine all fritter ingredients and mix well.
  • Prepare frying pan with about an inch of desired cooking oil.
  • Heat oil to 375° (or until fritters begin to sizzle but not smoke and burn) when dropped into the oil.
  • Drop by rounded tablespoons and turn once to brown both sides.
  • Drain on paper towels and serve hot with sliced fresh garden tomatoes and Garlic Dressing.

Garlic Dressing

  • Peel and crush all garlic cloves.
  • Place garlic in food processor or blender with vinegar and sugar. Blend well.
  • Add remaining ingredients, blending completely. Refrigerate, if time allows.

Notes

Notes: We have enjoyed these fritters for years. They are a great way to use abundant
garden zucchini squash and are enjoyed by those folks who claim to not care for zucchini.
