Ingredients
  

  • 4 tablespoons butter
  • 4 onions thinly sliced
  • 4 cups beef broth
  • 1 teaspoon salt or to taste
  • freshly ground pepper to taste
  • 4 slices French, Italian or Sourdough bread
  • 4-8 slices Swiss cheese Can use grated.

Instructions
 

  • Melt butter in small pot or cast-iron. Sauté onions until soft. Add broth, salt and pepper to pot and simmer until heated through.
  • Toast the sliced bread to very lightly brown.
  • Pour into four bowls or large soup mugs. Top with toast and cheese.
  • Broil in oven until cheese is melted and very lightly browned.

Notes

Homemade French Onion Soup can be made quite inexpensively if using homegrown onions and home-canned beef broth. An added bonus is that the home-canned broth is likely much more healthy than store-bought. 
This soup is as good as the ingredients that are used. A well-seasoned broth makes a difference for sure. 
This soup may be made ahead and even frozen or canned to use later.
