Ingredients
- 4 tablespoons butter
- 4 onions thinly sliced
- 4 cups beef broth
- 1 teaspoon salt or to taste
- freshly ground pepper to taste
- 4 slices French, Italian or Sourdough bread
- 4-8 slices Swiss cheese Can use grated.
Instructions
- Melt butter in small pot or cast-iron. SautƩ onions until soft. Add broth, salt and pepper to pot and simmer until heated through.
- Toast the sliced bread to very lightly brown.
- Pour into four bowls or large soup mugs. Top with toast and cheese.
- Broil in oven until cheese is melted and very lightly browned.

Homemade French Onion Soup can be made quite inexpensively if using homegrown onions and home-canned beef broth. An added bonus is that the home-canned broth is likely much more healthy than store-bought.Ā
