Ham and Corn Chowder
I made this recipe from leftovers one day. The whole family enjoyed.
Ingredients
- Leftover ham cubed or diced
- Leftover mashed sweet or white potatoes
- Chopped onions
- 1 qt chicken broth
- ¼ t. dried thyme
- 8 oz. frozen corn
- 1 c. milk.
- ½ t. salt
- 4 T. cornstarch
- 1 t. black pepper
Instructions
- Heat ham, potatoes, onions, broth, corn and thyme in soup pot, stirring occasionally to keep potatoes from sticking to the bottom of the pot.
- Bring to a boil;
- In a shaker or glass jar, add milk, cornstarch, salt and black pepper. Mix well and add to pot.
- Heat thoroughly and enjoy with cornbread on a blistery day!
